04 Jul cheesy quesadillas
Inspired by the Mexican flavours I savoured in San Francisco, these cheesy quesadillas work well as part of a table filled with fish tacos, guacamole and sour cream.
Cheesy Quesadillas with Lime Sour Cream
Serves 2
Prep time: 15 minutes
Cooking time: 10 minutes
Ingredients
2 large flour tortilla
Large handful of grated cheddar cheese
2 spring onions, finely sliced
Sunflower oil
For the lime sour cream
2 tablespoons of sour cream
Juice of half a lime
Half a green chilli, finely chopped
To serve
Guacamole (see our recipe above)
Method
- Place one tortilla on a chopping board. Cover with the cheese and scatter with the slices of spring onion. Place the second tortilla on top. Slice into four pieces.
- Heat a drizzle of sunflower oil on a griddle pan (or large frying pan) over a medium heat. Carefully transfer the slices of quesadillas onto the hot pan and fry until the cheese has melted.
- Meanwhile, make the lime sour cream by mixing the sour cream, lime and green chilli together.
- Serve the quesadillas with a dollop of lime soured cream and a spoonful of guacamole on the side.
