About Forkful
We are friends who love making simple food look beautiful. We hope our recipes will inspire you to get into the kitchen this season. Aoife McElwain works in front of the camera writing the recipes and styling the food, while Mark Duggan works behind the camera to make sure it all looks as delicious as possible. We work with editors such as Killian Broderick and music supervisors like Nialler9 to make sure that our finished videos look and sound as smart as possible. We work with brands like Glenisk and Folláin to help them create delicious video content for their online platforms. When we're not making videos, we write a weekly column called Speedy Suppers on Thursdays in The Irish Independent. Aoife writes the recipes and styles the food while Mark takes the photographs.  

avocado + noodle salad

This week, I’m carrying on with my recent preference for Asian-influenced flavours, with a simple noodle salad dressed with soy sauce, ginger and lime.

Avocado Noodle Salad

Serves 2

Prep Time: 15 minutes

Cooking Time: 5 minutes 



3 tablespoons of soy sauce

1 tablespoon of toasted sesame oil

1 teaspoon grated ginger

1 clove of garlic grated

Juice of half a lime

1 avocado

Red chilli

Spring onions

Fresh coriander

Black sesame seeds (optional)


  1. Make the noodles according to the packet’s instructions. Drain and allow to cool completely.
  1. For the dressing, mix together the soy sauce, toasted sesame oil, grated ginger, grated garlic, and the juice of half a lime. Pour the dressing into the noodles and mix well.
  1. Slice the avocado. De-seed and slice the chilli. Slice spring onions.
  1. Serve the noodles topped with avocado, chilli and spring onions. Serve with a fresh lime wedge, fresh coriander and black sesame seeds (if you have them).
