27 Nov celeriac slaw
½ a celeriac
2 small apples
4 tablespoons of mayonnaise
1 tablespoon of wholegrain mustard
1 tablespoon of apple cider vinegar
1. Peel the celeriac. Cut it into thin slices and then into matchsticks strips as thin as you can. Halve and core the apple, cutting into matchsticks strips too. Place in a large serving bowl.
2. Now mix together the mayonnaise, mustard and apple cider vinegar. Add to the celeriac and apple and mix until everything is well combined. Add a generous pinch of salt and pepper.
3. Serve with smoked trout on toast or as a side to a Sunday roast.
