About Forkful
We are friends who love making simple food look beautiful. We hope our recipes will inspire you to get into the kitchen this season. Aoife McElwain works in front of the camera writing the recipes and styling the food, while Mark Duggan works behind the camera to make sure it all looks as delicious as possible. We work with editors such as Killian Broderick and music supervisors like Nialler9 to make sure that our finished videos look and sound as smart as possible. We work with brands like Glenisk and Folláin to help them create delicious video content for their online platforms. When we're not making videos, we write a weekly column called Speedy Suppers on Thursdays in The Irish Independent. Aoife writes the recipes and styles the food while Mark takes the photographs.  

pomegranate + orange salad

Pomegranate and oranges are such a simple but lovely pairing. Whip this up if you need a bit of juice in your life.

Pomegranate and Orange Salad

Serves 4 as a side

Prep Time: 15 minutes

Ingredients

2 and a half oranges

2 large handfuls of baby spinach

2 tablespoons of crumbled feta cheese

2 tablespoons of pomegranate seeds

1 tablespoon of orange juice

1 tablespoon of honey

3 tablespoons of olive oil

1 tablespoon of red wine vinegar

Salt

Pepper

Method

  1. Peel two of the oranges and slice them into rounds. Squeeze the juice from the additional half orange so that you have about one tablespoon of orange juice. Set aside the juice to use in your salad dressing in a bit.
  1. Arrange the baby spinach on a large serving platter. Arrange your orange slices around the baby spinach. Scatter the feta cheese and pomegranate seeds over the salad.
  1. When you’re ready to serve, make the dressing by mixing together the orange juice, honey, olive oil, red wine vinegar and a pinch of salt and pepper. Pour half the dressing over the salad and serve the rest of the dressing on the side.
