About Forkful
We are friends who love making simple food look beautiful. We hope our recipes will inspire you to get into the kitchen this season. Aoife McElwain works in front of the camera writing the recipes and styling the food, while Mark Duggan works behind the camera to make sure it all looks as delicious as possible. We work with editors such as Killian Broderick and music supervisors like Nialler9 to make sure that our finished videos look and sound as smart as possible. We work with brands like Glenisk and Folláin to help them create delicious video content for their online platforms. When we're not making videos, we write a weekly column called Speedy Suppers on Thursdays in The Irish Independent. Aoife writes the recipes and styles the food while Mark takes the photographs.

_MG_1351 These recipes first appeared in The Irish Independent’s Insider magazine on Thursday 5th June. We’re making the most of the last of the rhubarb season in the forkful kitchen this week. There are two types of this tart vegetable; forced rhubarb grown in pots and maincrop rhubarb grown outdoors. Both love living in Irish soil, which means we can enjoy forced Irish rhubarb in our late winter crumbles or maincrop Irish rhubarb in our spring and summer spreads right through to the end of June.

Though neither require hard graft, both require a bit of cooking time. Spend some time on Saturday morning preparing our complimentary beetroot tzatziki and pulled pork recipes to serve up for lunch with friends or family without even breaking a sweat.

We became better bakers (and batterers) when we realised the key ingredient to an enjoyable cake is to take the pressure off the baker. So take your time and remember: you’re not on Masterchef. A leisurely slot of working with flour, milk and eggs on a Saturday morning can provide you with some luscious treats by lunchtime.

balsamic lamb These recipes originally appeared in INSIDER magazine in The Irish Independent on Thursday the 8th of May.  After feeling responsible for cursing the weather on our first of May column, this week our Insider recipes were specifically designed to be adaptable to our unpredictable spring/summer (sprummer?) weather. Our granola uses the jewels of pomegranate which help make dishes beautiful all year round and our lamb dish brings summer flavours to the comfort of a roast dinner.

Hesitant whispers about the return of summer were heard throughout the country after a few consecutive weekends of sun. We thought we would celebrate that for our column on the 1st of May by embracing the sunshine with summer recipes. Only for the 1st of May, the day of publication of our recipes in INSIDER in The Irish Independent, to turn out to be the grossest and soggiest of days this year. So. We're sorry for cursing the summer.

Avocado Brunch We are really pleased to share the news that forkful has joined the team at INSIDER magazine, a new lifestyle supplement with The Irish Independent on Thursdays. In our new weekly column, the forkful team will be bringing you our current squeeze on the recipe front and share with you the food that's currently inspiring us. We'll be talking about our triumphs and failures in the kitchen, and the Irish ingredients that makes us love rolling up our sleeves and get cooking. INSIDER's first issue appeared yesterday in The Irish Independent and we were tickled pink to be in the same pages as opinionated funny folk Colm Tobin and Carole Tobin, sassy style gurus such as Corina Gaffney and, of course, our forkful collaborator Nialler9.
